Coconut-Curry Yum

In crock pot or on the stove top combine:

  • 2 or 3 cups of chicken broth or the NO-chicken broth in the box at Whole Foods
  • 1 can of whole fat coconut milk
  • curry seasonings
  • chopped broccol
  • half an onion, chopped
  • tofu or chicken
  • spinach
  • carrots
  • sugar snap peas or any veggies you like
  • a touch of sea salt.

Bring to a boil and let simmer for an hour or two.  In the crock pot it takes about an hour.

You can add chicken/fish or tofu.
