In crock pot or on the stove top combine:
- 2 or 3 cups of chicken broth or the NO-chicken broth in the box at Whole Foods
- 1 can of whole fat coconut milk
- curry seasonings
- chopped broccol
- half an onion, chopped
- tofu or chicken
- spinach
- carrots
- sugar snap peas or any veggies you like
- a touch of sea salt.
Bring to a boil and let simmer for an hour or two. In the crock pot it takes about an hour.
You can add chicken/fish or tofu.
